Sam and Jill met in 2009 while Jill was attending LSU in Baton Rouge, Louisiana. In 2021, Jill moved back to her hometown of Fort Collins, Colorado.

On her many visits to Colorado, Sam would ask where to find traditional southern foods and that reminded Jill how much she missed the flavors of South Louisiana. That was the beginning of what is now NoCo Sneaux. Jill, having zero talent in the kitchen, decided SnoBalls would be the best way to bring a special treat from Louisiana to her family and friends back home.

She bought her first ice shaver directly from a manufacturer in New Orleans. The design was invented in New Orleans around 1935 and is still widely used today throughout the US.

Since Sam knows Jill very well, it was no surprise that a year later, that machine was still left untouched. That's when Sam decided to take action into her own hands. Six months later she pulled into Jill's driveway with a fully stocked trailer in tow and the rest is history!
